Microwaves protect Danæg from Salmonella

Danæg guarantees that the company does not bring Salmonella and diseases from one supplier to another.
The company is the only one with respect to this in the world.

"We are the only egg producer in the world who can guarantee that both the packaging and the pallets used for collecting eggs at the suppliers are 100% bacteria-free", says the Director of Danæg, Ernst Mittag. This is due to the two microwave ovens for pasteurisation of egg trays and EUR-pallets that Danæg has developed together with the employees of Svirco. The company have now changed name to Dicam Microwaves ApS.

Saved 200.000 EURO

The microwave oven was finished in the fall of 1999 and it has proved to be a good investment. - When using microwave pasteurisation we can recycle the egg trays 5-6 times. It means that we save approx. 200.000 EURO a year on egg trays, says Ernst Mittag.

Infected with bacteria

To make sure that the microwave treatment is efficient, Danæg has asked the Swedish Institut for Livsmedel och Bioteknik to make a thorough testing of the ovens. They have carried out tests by infecting the pallets and egg-trays with bacteria.

- All the "sick" pallets, which were treated with microwaves, were "healthy" when they came out of the oven. The greatest problems we faced when developing the ovens were to get the temperature sufficiently high. But we succeeded. Salmonella dies at a temperature of 70 degrees centigrade and when pasteurizing in the microwave oven the material is heated to 90 degrees centigrade, says Claes Göran Andersson from Institut for Livsmidel och Bioteknik.

- Microwaves are actually the only alternative if you want to protect both pallets and egg trays. I believe that the oven is a bit of a world sensation, says the Director of Danæg, Ernst Mittag.
